Foodie Friday: Smashed falafel with spiced tahini dressing

This week’s recipe is fresh, delicious, filling and (best of all) easy, with the ready made Birch & Waite dressing doing a lot of the legwork!

Smashed falafel salad with spiced tahini dressing

Ingredients  

Falafels

  • 1 cup canned chickpeas rinsed and drained
  • 1 red onion chopped
  • 1 cup packed fresh parsley
  • Half cup packed fresh coriander
  • 1 long green cayenne chilli
  • 5 garlic cloves chopped
  • 2 tsp sea salt flakes or to taste
  • 2 tsp ground cumin
  • 2 tsp ground coriander
  • Half tsp ground cardamon
  • Half tsp baking powder
  • Quarter tsp cracked black pepper
  • 5 tbsp chickpea flour or besan flour
  • Oil for deep frying

Salad

  • 1 bottle Birch & Waite Spiced Tahini Dressing & Sauce
  • 2 cucumbers cut lengthways, deseeded and sliced
  • 1 red onion halved and sliced
  • 250 g cherry tomatoes halved
  • Half cup parsley finely chopped, and extra to garnish
  • 1 tsp sesame seeds

Instructions 

  • Add chickpeas, onion, parsley, coriander, chilli, garlic, salt, ground spices, baking powder, black pepper and chickpea flour to a food processor. Process on high for a few minutes until the chickpea mixture resembles coarse sand and the texture feels quite fine.

  • Scoop into a bowl and mix well. Take about a tablespoon and half of the mixture in the palm of your hands and clump and shape it in a round ball. Repeat with remaining mixture.

  • Heat oil in a medium saucepan until starting to smoke. Gently drop falafels into the hot oil and deep fry on medium heat for 4-5 min until cooked through and browned. Remove and set aside to cool for 10 min.

  • Add cucumber, onion, cherry tomatoes and parsley to a medium bowl. Add half a bottle of Birch & Waite Spiced Tahini Dressing to the salad and mix well.

  • Spoon salad onto a rimmed serving plate. Top with falafels. Smash them lightly with a fork. Drizzle extra dressing and garnish with sesame seeds and parsley.

Notes

Birch & Waite dressings are made just like a chef would and can therefore be found in the fresh produce fridge next to the fresh herbs and salad bags. Spiced Tahini Dressing is exclusive to Woolworths but the Birch & Waite dressings range can be found in Coles, Woolworths and independent retailers.
